Add a couple of pinches of salt to a bowl.
Add 2 teaspoons of honey to the bowl.
Add 2 teaspoons of Dijon mustard to the bowl and mix together.
Pour in 4 tablespoons of white wine vinegar and mix.
Add 4 tablespoons of extra virgin olive oil to the mixture.
Add 8 tablespoons of vegetable oil, sunflower oil, or ground nut oil to the mixture.
Shake the dressing in a jar until well combined and emulsified.
Prepare the salad by adding romaine lettuce, Rocket, parsley, bell pepper, celery leaf, radish strips, red onion, and baby cucumbers to a bowl.
Add a pinch of garlic and a pinch of chives to the salad.
Season the salad with a tiny amount of salt and a twist of pepper.
Pour about 2 tablespoons of the dressing over the salad and toss to coat.
