Peel the green plantains by cutting each end with a paring knife and slicing down one side to pull the skin apart.

Cut each peeled plantain in half, then cut each half in half again.

Place the plantain pieces into a pot of hot boiling water over medium-high heat.

Add 1 tsp of salt to the water and let the plantains cook for about 25 to 30 minutes.

While the plantains are cooking, slice the red onion and soak them in a mixing bowl with white vinegar.

Cut the Dominican salami and one slice of frying cheese.

In a frying pan over medium-high heat, fry an egg by cracking it into the pan and pouring oil over the top to cook the egg.

Fry the salami for about 4 minutes and remove it from the pan when ready, followed by the fried cheese.

In a saucepan, add the soaked onions and some of the vinegar they were soaking in, and cook over medium heat until the onions are soft.

After 30 minutes, check the plantains; they should have changed color and be tender.

Place the cooked plantains into a mixing bowl and reserve some of the cooking water.

Add 1 to 2 tablespoons of butter to the plantains and some of the reserved cooking water, mashing the plantains with a potato masher until you reach your desired texture.

If the plantains become too hard, add a little cold water while mashing to keep them soft.

Serve the mangu with the fried salami, cheese, and eggs.
