Peel 3 large potatoes and chop them into small pieces.
Wash the chopped potatoes several times until the water runs clear to remove excess starch.
Prep some onions, tomatoes, and coriander.
In a bowl, add the chopped potatoes and season with 1/2 teaspoon of paprika, 1/2 teaspoon of garlic powder, 1/4 teaspoon of black pepper, and around 1/4 teaspoon of salt.
Add 1 tablespoon of cooking oil to the potatoes and toss until fully combined.
Place a nonstick pan over medium low flame and add 1 tablespoon of cooking oil.
Once the oil is hot, transfer the seasoned potatoes into the pan in a single layer.
Reduce the flame to low and cook the potatoes for around 5 to 6 minutes, checking for doneness based on the size of the potato pieces.
After 5 to 6 minutes, check the seasoning and add more salt if needed, then toss the potatoes.
Add 1 onion and 1 large chopped tomato to the pan with the potatoes and toss together.
Cook for around 1 minute until the onions are soft but still have a little crunch, and the tomatoes are heated through.
Check the seasoning again and adjust if necessary.
Make wells in the potato mixture and crack in the eggs.
Sprinkle chili flakes on the eggs and add a little salt.
Cover the pan and cook for around 2 to 4 minutes, adding a splash of water if the pan is drying out to create steam.
Shake the pan occasionally to ensure the eggs are not sticking.
For runny yolks, cook for around 6 to 8 minutes; for well-cooked eggs, cook for around 10 minutes.
After about 6 minutes, check the eggs; they should be almost set.
Once the eggs are cooked to your liking, remove from heat and garnish with coriander before serving.
