1

Combine the water, milk, yeast, and sugar in a bowl and let it rest for about 10 minutes.

2

In another bowl, mix together the flour and salt.

3

After 10 minutes, add the yeast mixture to the flour and salt, knead the dough for about 5 minutes, then add the olive oil.

4

Continue kneading the dough on a flat surface for about 10 minutes until smooth.

5

Place the dough back in the bowl and let it proof for about an hour.

6

Peel and cut the potatoes into strips, wash them well to remove extra starch, and set aside.

7

Fry the potatoes in oil on medium heat for about 20 minutes until crispy.

8

Cut the chicken thighs into small pieces and marinate with salt and black pepper.

9

Fry the chicken on medium heat with a crushed garlic clove and rosemary oil for about 15 minutes until crispy on the outside and juicy inside.

10

Dice the cucumber and mince the garlic cloves, then add them to the sour cream along with olive oil and salt, mixing well to prepare the tzatziki.

11

After an hour, take the dough out, cut it into six equal pieces, and shape each piece into a sphere.

12

Roll out each piece of dough with a rolling pin to the desired size.

13

Fry the rolled-out pita in a little olive oil, poking holes with a fork to keep it flat, cooking for about 2 minutes on each side.

14

Assemble the gyro by adding tzatziki sauce, lettuce, tomatoes, chicken, and fries, then wrap the pita around the filling.
