Print out the template from howtocookthat.net.
Bake the cakes in a large tin or box and cut them into layers, trimming off any overcooked parts.
Use a cake leveler or knife to cut the cake into layers and stack them to create the back of the truck.
Cut another layer of cake for the top shorter section using the template.
Make French buttercream frosting for the cake.
Cut a sturdy piece of cardboard in the shape of the top template, cover it in foil, and tape it into place.
Cut extra rectangles of cardboard to support the cake and tape them together, aligning them with where the wheels will go.
Add tape and place the cake board on top of the supports.
Spread a thin layer of buttercream onto the cake board, then add the first layer of cake, followed by more frosting, and another layer of cake.
If not using the cake the same day, brush simple syrup onto each layer to keep it moist.
Continue stacking cake layers and frosting until reaching the height of the back of the truck, then add the smaller piece to the front.
Use the side template to shape the cake at the top and front with a knife.
Cover the entire cake in a layer of frosting and smooth it out, then refrigerate for an hour to firm up.
Roll out white fondant thickly and cut a straight line for the ladder using a pizza cutter.
Make a rectangle cookie cutter or cut holes by hand for the ladder.
Cut the side panels from the template and roll out light grey fondant, cutting around each one and indenting lines for detail.
Roll a thin snake of fondant for the roller door handle and add tiny balls to each end.
Make small square panels from fondant and cut out the horns for the top of the cake.
Roll light grey fondant into horn shapes and cut circles for the tops.
Cut a rectangle and trim corners for the door handle, and make side mirrors from balls of fondant.
Cut thin strips for windscreen wipers and leave them to dry.
Make fondant details up to a month in advance and store them in an airtight container once dried.
Roll out red fondant and cover the cake, smoothing it out and trimming excess at the base.
Cut out the front windscreen from white fondant and attach it to the cake.
Add a white strip along the front and light grey headlights on top.
Create stripes with red fondant across a white strip and trim excess.
Add a rectangle of red fondant to the front of the cake and make indents down the front.
Attach the stripy piece just below the front rectangle and add dark grey pieces made earlier.
Attach windscreen wipers using water to stick them on.
