Chop broccoli and cauliflower into smaller pieces.
Steam broccoli and cauliflower for 5-8 minutes until crispy, then cool with cold water and drain.
In a bowl, mix 1 tablespoon of mustard with 1 tablespoon of apple cider vinegar and a pinch of sugar or stevia.
Add 100g of yogurt and 100-150g of mayonnaise to the mixture and stir well.
Add 1 teaspoon of dried tarragon, 1 teaspoon of salt, 0.5 teaspoon of dried garlic, and 0.5 teaspoon of dried onion to the dressing and mix again.
Cut the tomatoes into pieces and place them in a bowl.
Add the drained and cooled broccoli and cauliflower florets to the bowl with tomatoes.
Pour the dressing over the vegetables and mix gently.
Sprinkle with diced Emmental cheese and salted almonds cut into large pieces.
Garnish with slices of hard-boiled eggs and sprinkle with paprika.
