Chop off the top of the red pepper and remove the stalk.
Chop off the bottom of the red pepper and remove the core by running a knife around the outside.
Optionally, remove the white bits of flesh from the red pepper.
Chop the red pepper into chips or sticks, then turn them sideways and chop down to create cubes.
Chop the onion by removing the top and slicing through the root while keeping it intact, then peel it.
Chop the onion into small pieces, avoiding cutting through the root.
Heat vegetable oil in a large pan and add the chopped red peppers, cooking for about 4 minutes until they start to soften.
Add the chopped onion to the pan with the red peppers and cook together for about 10-15 minutes until soft.
Add 500g of beef mince to the pan, cover with a lid, and brown the meat.
Add 2 teaspoons of paprika, 2 teaspoons of chili powder, 2 teaspoons of cumin, and 1 teaspoon of oregano to the browned meat and mix well.
Chop 4 cloves of garlic and add to the mixture, along with 2 fresh chilies, 2 cans of chopped tomatoes, and 2 cans of water.
Add 2 beef stock pots and some dark chocolate to the mixture.
Stir everything together and let it cook on low heat with the lid on for about 5 hours.
After 5 hours, remove the lid to thicken the chili and continue cooking on low heat.
Taste the chili and add salt to season, without adding black pepper.
Prepare guacamole by cutting 2 avocados, removing the seed, and peeling the skin.
Mash the avocados with fresh lime juice using hands or a fork.
Add chopped garlic, chopped red chili, chopped uncooked white onion, chopped tomatoes, and chopped coriander to the mashed avocado and mix well.
Season the guacamole with salt and pepper to taste.
