3 tablespoons (16 grams) of ground cumin
1/2 teaspoon (0.2 grams) of cayenne pepper (optional)
2 tablespoons (35 grams) of tomato paste
1/2 cup (125 milliliters) of beef stock
800 grams (28 ounces) of crushed or diced tomatoes
400 grams (14 ounces) of kidney beans (rinsed)
2 cups (390 grams) of jasmine rice
1 star anise
3 cardamom pods
3 and 3/4 cups (860 milliliters) of cold water

Slice and dice 1 large brown onion and set aside.

Crush and chop 5 cloves of garlic, then set aside.

To cook rice, combine 2 cups of jasmine rice, 1 star anise, 3 cardamom pods, and 3 and 3/4 cups of cold water in a saucepan.

Bring to a boil, cover, reduce heat to low, and simmer for 14 minutes.
