Turn the pot on to medium-high heat.
Chop the onions, garlic, serrano pepper, and red pepper.
Add the chopped onions, garlic, and serrano pepper to the pot and cook for about 5-8 minutes until they get some color.
Add the chopped red pepper to the pot.
Add corn and zucchini to the pot after the onions and peppers have colored.
Cook the corn and zucchini for about 5 minutes to get more color.
Add chili powder, cumin, ground coriander, cayenne, garlic powder, and about a teaspoon of dried cocoa to the pot.
Add drained and rinsed black beans, kidney beans, and pinto beans to the pot.
Add canned tomato purée and a few cups of vegetable stock to the pot.
Add the roasted red pepper purée to the pot.
Cook the chili for about 30-40 minutes until it thickens and smells great.
Add chopped cilantro and a pinch of pepper just before serving.
