Boil water in a clay pot.
Add a large cinnamon stick to the boiling water.
Add sugar to the water and let the cinnamon release its flavor.
Prepare the corn by removing the husks and silk; each ear yields about 1 cup of corn.
Use yellow corn, which is sweeter and has less starch than white Mexican corn.
Blend one part of the milk with the corn until smooth.
Strain the corn mixture to remove solids.
Once the cinnamon has infused the water, add the strained corn mixture and the remaining milk to the pot.
Dissolve a bit of cornstarch in cold water and add it to the atole during cooking.
Taste the atole for sweetness and adjust if necessary.
Continue stirring constantly until the atole thickens, about 30 minutes.
Remove from heat and serve hot.
