Caramel Upside Down Cake, often associated with American home baking, showcases the delightful combination of caramelized fruit and moist cake. Traditionally made with pineapple, this cake became popular in the mid-20th century, reflecting the era's love for convenience and flavor. Today, variations abound, with different fruits and flavors, making it a beloved dessert for gatherings and celebrations.
Peel the apple and slice into 1/4 inch thick slices.
Sprinkle cinnamon and sugar over the apples and stir gently to coat them in the spices.
Use a 9-inch cake pan, grease the bottom and sides with oil, and place a circle of parchment paper on the bottom, greasing the parchment paper as well.
Place the apples on the bottom of the pan in an even layer.
In a stainless steel pan, add sugar, pour in water, and add glucose or corn syrup to stabilize the caramel.
Stir gently with a spatula until the sugar is incorporated with the water.
Dip a brush in water and brush the sides of the pan to prevent sugar crystals from forming.
Place the pan over medium-high heat and let the mixture come to a boil without stirring or shaking the pan.
Watch for the sugar to melt and become a clear syrup with fast-moving bubbles.
Once the bubbling slows down and the caramel starts to darken, gently swirl the pan once or twice.
Continue cooking until the syrup is a light golden color, then immediately remove from heat and pour over the apples in the pan.
Set the pan aside and start making the cake batter by whisking together flour, baking powder, salt, cinnamon, and nutmeg, then set aside.
In a mixer, beat the butter at medium speed for 1 minute, then add sugar and beat with the butter for another 2 to 3 minutes.
Add eggs one at a time, mixing until incorporated before adding the next egg, then add vanilla and mix to combine.
Add half of the dry ingredient mixture to the bowl and mix on low, then pour in buttermilk and mix until incorporated.
Add the remaining dry ingredient mixture and mix on low to combine.
Spread the batter over the cooled caramel and apple mixture in the cake pan.
Bake the cake in a preheated 350°F oven for 30 to 35 minutes.
Remove the cake from the oven and let it cool for about 15 minutes before flipping it onto a plate.
It's important to remove the cake from the pan before the caramel hardens.
Let the cake cool down before slicing and serving.
