Cream together 1/2 cup unsalted butter and 2 cups sugar using a Hamilton Beach mixer on setting number four until fluffy.
Sift together 2 1/2 cups cake flour, 1 teaspoon baking soda, 1 teaspoon baking powder, and 1/4 teaspoon salt to create dry ingredients.
In a separate bowl, prepare sour milk by adding 1 tablespoon of white vinegar to 1 cup of 2% milk and let it sit for a few minutes to sour.
Separate 3 eggs, placing the yolks in one bowl and the whites in another, ensuring no yolk gets into the whites.
Beat the egg whites until stiff peaks form, being careful not to get any yolk in the mixture.
Combine the creamed butter and sugar mixture with the dry ingredients and sour milk, mixing until well combined.
Gently fold in the beaten egg whites into the batter until just incorporated.
Pour the batter into a prepared cake pan and bake until a toothpick inserted comes out clean.
