  • bell peppers

  • vegetable broth
  • canned tomatoes

  • parmesan cheese
  • red pepper flakes
  • bay leaves

Instructions

  1. 1Heat olive oil in a large pot over medium heat until shimmering.
  2. 2Add chopped onion, carrots, and celery; sauté until softened, about 5-7 minutes.
  3. 3Stir in minced garlic and cook until fragrant, about 1 minute.
  4. 4Add diced bell peppers and cook until they begin to soften, about 5 minutes.
  5. 5Pour in canned tomatoes and vegetable broth; bring to a simmer.
  6. 6Stir in rice, basil, oregano, bay leaves, and red pepper flakes.
  7. 7Season with salt and black pepper to taste.
  8. 8Cover and simmer until rice is tender, about 20-25 minutes.
  9. 9Remove bay leaves before serving.
  10. 10Ladle soup into bowls and garnish with grated parmesan cheese.

  • 2 English muffins
  • 4 large eggs
  • 4 slices Canadian bacon
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter

Instructions

  1. 1Split the English muffins in half and toast them until golden brown.
  2. 2In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  3. 3In a non-stick skillet, melt the butter over medium heat.
  4. 4Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are scrambled and just set.
  5. 5In the same skillet, add the Canadian bacon and cook until heated through, about 2-3 minutes per side.
  6. 6On the bottom half of each toasted muffin, place a slice of Canadian bacon.
  7. 7Top the bacon with a portion of scrambled eggs and a sprinkle of shredded cheddar cheese.
  8. 8Cover with the top half of the muffin to complete the sandwich.
  9. 9Serve warm and enjoy your homemade McMuffins.
