Add warm milk, sugar, and instant yeast into a mixing bowl.
Add in the egg, salt, and flour.
Use a dough hook to mix the ingredients until they start coming together, about 1 minute.
Add the melted unsalted butter into the mixture.
Knead the dough using the mixer for about 8 minutes.
Remove the dough from the bowl and place it into a greased bowl.
Cover the bowl and let the dough rise for about 1 hour.
Flour the workbench and transfer the risen dough onto it.
Roll out the dough and cut out doughnuts using a doughnut cutter, placing them onto squares of parchment paper.
Let the cut doughnuts rise for about 1 hour, spraying them with a little water to keep them moist.
Heat canola oil in a deep fryer to 350°F (177°C).
Fry three doughnuts at a time for 1.5 minutes on the first side and 1 minute on the second side.
Remove the doughnuts from the oil and coat them in a mixture of granulated sugar and cinnamon.
