Cultural Context

Coconut popsicles, or paletas de coco, are a beloved treat in Mexico, especially in coastal regions where fresh coconuts are abundant. Traditionally enjoyed during hot summer days, these popsicles reflect the country's vibrant street food culture. 1

Dissolve cornstarch in 2 cups of whole milk, stirring well to eliminate lumps.

2

Make a hole in the coconut to drain the water and reserve it in another container.

3

Cut one and a half coconuts into small pieces and add them to the blender.

4

Grate half of the reserved coconut and cut the other half into small cubes.

5

Add the chopped coconut to the blender with the reserved coconut water, 2 liters of coconut milk, and a piece of cinnamon.

6

Blend everything for about 3 minutes until well mixed.

7

Transfer the blended mixture to a saucepan and cook over medium heat until it starts to boil.

8

Add the can of evaporated milk and the can of sweetened condensed milk, mixing well.

9

Stir in the grated coconut and the small coconut cubes.

10

Add the dissolved cornstarch and a splash of vanilla extract, mixing everything together.

11

Cook for about 8 to 10 minutes, stirring continuously to prevent sticking.

12

Once it starts to boil, turn off the heat and let the mixture cool completely.

13

Soak the wooden sticks in water to prevent them from floating when inserted into the cups.

14

Once the mixture is cool, fill the disposable cups with the mixture, leaving some space at the top.

15

Insert the soaked wooden sticks into the center of each cup.

16

Freeze for about 4 to 5 hours, preferably overnight.

17

To remove the paletas, warm the outside of the cup with your hands and gently pull up on the stick, or submerge in warm water for about 20 seconds if needed.
