Chop up 3/4 of a small onion.
Saute the chopped onion in a pan until it becomes fragrant.
Remove the onions from the pan and set them aside.
Drain the grease from the pan.
Add 1 pound of ground beef to the pan and begin cooking it.
Break up the ground beef as it cooks until all the redness is gone and there are no juices left.
Add the sautéed onions back into the pan with the ground beef.
Stir in 2 cans of tomato sauce and 2 cans of Rotel.
Add 1/4 cup of sugar to reduce acidity and stir well.
Turn the oven on to 375°F and let the mixture simmer for about 5-10 minutes.
Drain the juice from 1 can of kidney beans and add the beans to the meat mixture.
In a separate bowl, mix 2 boxes of Jiffy cornbread mix and break up any lumps.
Beat 2 eggs in a bowl and add them to the cornbread mixture.
Add 1/2 cup of milk and 1/4 cup of sugar to the cornbread mixture.
Add 1 can of cream corn and 1 cup of shredded cheese to the cornbread mixture and mix well.
Spray a deeper baking pan with cooking spray.
Pour the meat mixture into the baking pan and smooth it out.
Pour the cornbread mixture on top of the meat mixture and smooth it out.
Bake in the oven for about 45 minutes.
Remove the casserole from the oven after about 38 minutes and let it cool before serving.
