Prepare the sauce in a large jar by mixing 1 tablespoon of mustard, 1 tablespoon of Miracle Whip, 1 tablespoon of Italian herb mix, salt, and pepper.
Add 1/2 tablespoon of olive oil to the sauce mixture, close the jar, and shake well to combine.
Let the sauce sit for 2-3 hours to allow the flavors to meld and the dried herbs to soften.
Pour the sauce over the tortellini salad and mix gently using your fingers to avoid squishing the ingredients.
Add sun-dried tomatoes to the salad for extra flavor, mixing them in carefully.
