Combine 140 g tapioca flour, 40 g oat flour, and 120 g millet flour in a KitchenAid bowl.
Add 16 g psyllium husk powder to warm water and whisk to prevent clumping, then let sit for 5-10 minutes to form a gel.
Activate 6 g dry yeast in warm water with 10 g dark brown sugar, then let sit for 5-10 minutes.
Mix the flour blend and add 5 g salt and the activated yeast mixture once ready.
Mix the dough for about 8-10 minutes using the KitchenAid mixer.
Prepare a baking soda bath with 5 cups of water and 5 tbsp of baking soda, and a molasses bath with 5 cups of water and 10 tbsp of molasses, bringing both to a boil.
Shape the dough into bagels and place them in the boiling baking soda bath for a few minutes, then transfer to the molasses bath if desired.
Remove bagels from the baths and place them on a baking sheet lined with parchment paper.
Sprinkle with toppings like black garlic finishing salt or sesame seeds if desired.
Bake in the preheated oven until golden brown.
