2 T butter
1 onion, chopped (about 3/4 cup)
3/4 cup chopped celery (4 stalks)
3/4 cup chopped carrots
2 cloves garlic, minced
1 lb cooked lean ground beef
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1 tsp taco seasoning
2-3 Tbsp Beef Better than Bouillon + 5 cups water
2.5 lb potatoes, peeled and diced
1 tsp thyme, dried
1/2 tsp basil, dried
2 T ketchup
1 T mustard
3 T butter
1/4 cup flour
1 1/2 cups milk
1 tsp salt
1/4 tsp pepper
8 oz old cheddar, shredded and divided in half

If you don’t have precooked ground beef, start by browning 1.5lb of lean ground beef, drain and set aside.

In a soup pot/dutch oven over medium heat, melt 2 T butter.

Add onion, celery, carrots, and garlic. Cook, stirring occasionally until veggies are tender, about 10 minutes.

Add cooked ground beef, and salt, pepper, garlic powder, and taco seasoning. Stir and cook for a couple of minutes, until spices are fragrant.

Stir in the water, Better than Bouillon, potatoes, thyme, basil, ketchup and mustard. Bring to a boil. Reduce heat to medium low and cover. Simmer for 20-25 minutes or until potatoes are tender.

Make a roux: In a small pot, melt 3 T butter over medium heat. Add the flour and whisk until smooth. Whisk the milk into the roux, then stir into the soup.

Bring the soup to a boil, and keep stirring until you notice it thickening. Reduce heat to low. Add 1 tsp salt and 1/4 tsp pepper. Stir in half of the shredded cheese until melted and mixed through.

Serve with buns, and the remaining shredded cheese to sprinkle on top of each bowl.
