Sift the flour into a bowl to avoid lumps.
Add semolina to the flour.
Create a well in the center of the flour and add 2 whole eggs and 6 egg yolks.
Mix the eggs with the flour gradually, adding salt to taste either now or later in the cooking water.
Knead the dough for 7 to 10 minutes until smooth and elastic.
Cover the dough with plastic wrap and let it rest in the refrigerator for 45 minutes to 1 hour.
While the dough is resting, prepare the filling by chopping the ham and mozzarella cheese into large pieces.
Process the ham and mozzarella cheese in a food processor until finely chopped.
Add nutmeg, parmesan cheese, 1 egg, salt, and black pepper to the filling and mix well until combined.
Refrigerate the filling while preparing the sauce.
To make the sauce, heat milk in a pot until it begins to boil, then remove from heat.
In a separate pan, melt butter over medium-low heat.
Once the butter is melted, add flour and mix well to form a roux.
Gradually add the hot milk to the roux, stirring continuously to avoid lumps.
Season the sauce with nutmeg and black pepper to taste.
Add cheddar cheese and other cheeses to the sauce, stirring until melted and smooth.
