Prosciutto-Wrapped Asparagus

1 lb asparagus
8 oz prosciutto
2 tbsp single source extra-virgin olive oil
1 tbsp lemon infused white balsamic vinegar
1/4 tsp pepper
to taste pea shoots
8 oz boiled baby red potatoes
1 tbsp herb infused olive oil
to taste scallop mousseline

Preheat the oven to 450 degrees.

Drizzle olive oil on a roasting pan lined with parchment paper.

Roll the asparagus tightly in thinly sliced prosciutto.

Space the wrapped asparagus on the roasting pan so they are not touching each other.

Drizzle a little more olive oil and add pepper on top of the asparagus.

Place the pan in the oven and roast for about 5 minutes.

After 5 minutes, shake the pan to rotate the asparagus or turn them with tongs to ensure even crisping.

Remove the roasted asparagus and prosciutto from the oven and plate them.
