Heat a large skillet over medium-high heat.
Add about 1 tablespoon of olive oil and 2 tablespoons of butter to the skillet.
Pat chicken thighs dry, trim excess skin and fat, and season one side with salt and pepper.
Place chicken thighs skin side down in the skillet and season the other side with salt and pepper.
Cook chicken for 5 to 7 minutes on each side until golden brown, then remove from the skillet and set aside.
In the same skillet, add 1 sliced medium onion with a pinch of salt and cook for 5 to 7 minutes until softened and caramelized.
Add 2 sliced medium apples to the onions and cook for another 5 minutes until the apples start to soften.
Stir in 1.5 teaspoons of dried thyme, a pinch of salt, and black pepper to the apple and onion mixture.
Pour in 2 oz of dry white wine to deglaze the pan, scraping up any browned bits from the bottom.
Add 4 oz of apple cider to the mixture and stir well to combine.
Nestle the chicken thighs back into the skillet with the apple and onion mixture, adding any juices from the plate.
Cover the skillet and cook for 10 to 15 minutes until the chicken reaches an internal temperature of 180°F (82°C).
Serve the chicken on a bed of rice, egg noodles, or mashed potatoes, topped with the apple and onion sauce.
