Draw a circle on parchment paper along the edges of an 8-inch cake pan and cut it out.
Grease the cake pan with butter and dust it with plain flour.
Place the cutout parchment paper in the bottom of the pan and press down lightly.
Melt 75 g of salted butter in a saucepan on low flame and set aside.
In a large bowl, combine 3/4 cup sugar, 3/4 cup curd or yogurt, and the cooled melted butter. Mix with a handheld beater until the sugar is dissolved, about 1 minute.
Add 1 teaspoon instant coffee powder and 3 tablespoons cocoa powder to the mixture and mix well, scraping the sides as needed.
Add 1 teaspoon vanilla essence, 1 teaspoon vinegar, 1 and 1/2 cups plain flour, 1/2 teaspoon baking soda, and 1 teaspoon baking powder. Lightly mix the ingredients together.
Gradually add 1/2 cup milk while mixing, ensuring not to over mix the batter.
Fold the batter gently with a spatula until thick, creamy, and spongy.
Transfer the batter into the prepared cake pan and level the top with a spatula. Tap the pan on the countertop to release air bubbles.
Heat a 10-inch cast iron pan on the gas stove. Once heated, reduce the flame to the lowest and place a steamer stand inside the skillet.
Place the cake pan on the steamer stand and cover with a lid. Cook on medium flame for 30 minutes.
After 30 minutes, check the cake and cover again, cooking for another 15 minutes.
After 15 minutes on low flame, check the cake with a toothpick; it should come out clean if the cake is ready.
Carefully remove the pan from the skillet and allow it to cool on the kitchen counter.
Run a knife around the edges of the cake and invert it onto another plate, peeling off the parchment paper afterward.
