Add 2 teaspoons of smoked paprika, 2 teaspoons of ground cumin, 1 teaspoon of garlic powder, 1/2 teaspoon of cayenne pepper, 1 teaspoon of dried oregano, 1/4 teaspoon of white pepper, and 1 teaspoon of salt into a small bowl and mix until combined.

Butterfly 3 chicken breasts open and cut them into thin strips.

Place the chicken strips into a mixing bowl and sprinkle half of the fajita seasoning over them, mixing until coated.

Wash your hands after handling the chicken.

Remove the stems and seeds from 3 bell peppers and thinly slice them.

Top and tail 2 red onions, cut them in half, peel, and slice them.

Heat a large sauté pan over high heat and drizzle in 2 tablespoons of oil.

Once the oil is hot, add the chicken and fry for 4 to 5 minutes until cooked through, then remove from the pan.

In the same pan, add the sliced peppers and red onion and stir-fry for 3 to 4 minutes until softened.

Sprinkle the remaining fajita seasoning over the vegetables, add the chicken back into the pan, and stir until everything is coated and heated through for 1 to 2 minutes.

Warm the wraps in the oven for a couple of minutes, in a frying pan for 30 seconds on each side, or in the microwave for 30 seconds.

Prepare baby gem lettuce by using the leaves as cups or shredding it up.

Assemble the fajitas by placing a couple of lettuce leaves on the bottom of the wrap, adding chicken filling in the center, spooning over sour cream, and sprinkling cheese on top.

Fold in the sides of the wrap, then fold the top over and roll it up to secure the filling.
