Homemade pesto can be lighter and cheaper depending on ingredients.

Crack 2 large BC eggs into portion cups to check for broken yolks and shells.

Heat a medium-sized pan over medium heat.

Add pesto to the pan instead of butter or oil and spread it around.

Carefully add the eggs one at a time into the pan.

Season the eggs with salt and fresh cracked pepper.

Cook the eggs until the egg whites are set but the yolks remain runny, optionally adding a little pesto on top of the whites for color.

If desired, cover the pan with tin foil or a lid to help the whites set, but this will make the yolks less sunny.

Remove the eggs from the pan once the whites are set to your liking.

Plate the eggs on top of toast spread with cream cheese or goat cheese.

Dust the eggs with freshly grated Parmigiano-Reggiano cheese if desired.
