Vegan Jamaican Beef Patties

Originating from Jamaica, beef patties are a beloved street food, traditionally filled with spiced beef and encased in a flaky pastry. The vegan version retains the essence of the original while catering to plant-based diets, celebrating the rich flavors of Jamaican cuisine. Today, these patties are enjoyed globally, with variations reflecting local tastes and ingredients.

Start by making the filling for the patties to allow it to cool.
Chop half a large onion and scallions, and crush a whole bunch of garlic.
In a skillet, cook the onion, scallions, and garlic until fragrant.
Add Browning sauce to the mixture for color.
Add the Impossible beef (or use a whole packet if available) to the mixture and cook until heated through.
If breadcrumbs are not available, mash up ciabatta bread in water and add it to the mixture for consistency.
For the pastry, mix together 2 cups of flour, 1 tablespoon of sugar, and a little salt.
Cut in unsalted butter into the flour mixture until it resembles coarse crumbs.
Slowly add ice cold water to the mixture until a dough forms, being cautious not to add too much at once.
Add turmeric and curry powder for color, but be careful not to overdo it as it can alter the flavor.
Roll out the dough and fold it to create layers, optionally adding more butter for flakiness.
If the dough sticks to the rolling pin, add more flour to the surface.
Wrap the dough in plastic and refrigerate for 30 minutes.
Roll out the dough to about 1/8 inch thick after chilling.
Use a bowl to cut out circles from the dough for the patties.
Place a spoonful of filling in the center of each circle, being careful not to overfill.
Fold the dough over the filling and seal the edges with a fork.
