Slice the green tomato into 1/2 inch slices.
Remove the stem from the top piece of the tomato.
Place the tomato slices on a rack with paper towels underneath and salt them.
Let the salted tomato slices sit for about 15 minutes to draw out moisture.
Prepare the breading mix by combining half cornmeal and half breadcrumbs, adding black pepper, cayenne, and about half a teaspoon of salt.
Beat a couple of eggs and add about 2 tablespoons of milk to the mixture.
Set up a breading station with flour, egg mixture, and the cornmeal-breadcrumb mixture.
Pat the salted tomato slices dry to remove excess moisture.
Coat each tomato slice in flour, then dip in the egg mixture, and finally coat with the breadcrumb mixture, ensuring they are fully coated.
Place the breaded tomato slices on a rack and let them sit for 10 minutes to allow the egg to tighten up.
Mix together sweet relish, mayonnaise, and hot sauce to create the spicy remoulade sauce.
Heat a large sauté pan on medium heat and add about an eighth of an inch of oil and about a tablespoon of butter.
Wait for the butter to melt and bubble, indicating the oil is hot enough.
Carefully add the sliced green tomatoes to the pan.
Cook the tomatoes for about 3 to 4 minutes on each side, turning them with a spatula and fork.
Once cooked, place the fried green tomatoes on a serving plate and add a dollop of spicy remoulade sauce.
