Sprinkle the tomato slices with a mixture of 2 teaspoons kosher salt, 1 teaspoon sugar, 1/2 teaspoon white or black pepper, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, and 1/2 teaspoon Italian seasoning. Let sit for 10 to 15 minutes to drain excess juices.

Dip each tomato slice into the flour mixture, shaking off excess, then into the egg and buttermilk mixture, and finally into the cornmeal and breadcrumb mixture, pressing to coat evenly. Let sit for about 5 minutes to set the coating.

Heat canola or vegetable oil in a cast iron skillet or large skillet until hot, about 350 degrees.

Carefully add the coated tomato slices to the hot oil, frying each side for about 3 to 5 minutes until golden brown.
