Wash 200 grams of chicha in cold water a couple of times to remove excess starch.
Add the washed chicha to a pot with 500 milliliters of water and bring to a boil.
Add 1 tablespoon of olive oil to the pot and mix it in.
Turn the heat down to medium and cover the pot, cooking for 5 to 20 minutes until the grains have expanded and absorbed most of the water.
Add 750 milliliters of milk to the pot and cover, mixing occasionally for 10 to 15 minutes until the milk is absorbed.
Add 1/4 teaspoon of salt to finish the dish.
Drizzle olive oil over the balboula for savory serving or drizzle honey for the sweet version.
