2 Chicken breasts, cut into 1 in strips
1 lemon, zest and juice
1 tbsp chilli flakes
2 tsp sea salt or to taste
2 tbsp maple syrup
4 tsp Olive oil
1 tsp freshly ground black pepper
4 sprigs of thyme
1 tsp ginger paste
1 tsp garlic paste
Wooden skewers, soaked in water

Cut the chicken breast into 1 in strips and set aside.

Prepare the marinade by zesting one lemon, squeezing the juice of 1 lemon, and adding the chilli flakes, salt, black pepper, maple syrup, olive oil, thyme, ginger and garlic paste. Mix well and add to the chicken. Coat the chicken with the marinade, cover and leave in the fridge for 1 to 2 hours.

Remove the chicken from the fridge and skewer them on wooden skewers that have been soaked in water and place on the baking tray.

Place the threaded skewers in the airfryer at 425 degrees F for 10 mins. Turn the tray around and cook for another 2-3 mins until chicken is cooked.

Once the chicken is cooked, let it rest for about 5 mins and then serve with potatoes and a mango salad.
