No-Bake Healthy Chocolate Cookies

In a dry pan, add almonds, sunflower seeds, cashew nuts, pumpkin seeds, flax seeds, and chia seeds.
Dry roast on low heat for 7-10 minutes, stirring occasionally.
Once fragrant and lightly golden, remove from heat and let them cool completely.
Transfer the cooled roasted nuts and seeds to a blender or food processor.
Pulse until you get a coarse powder (do not make it too fine).
Chop the 200g dark chocolate into small pieces.
Melt using a double boiler method (place a heatproof bowl over a pot of simmering water and stir until smooth).
Alternatively, microwave in 20-second intervals, stirring in between, until fully melted.
Add the nut & seed powder to the melted chocolate.
Stir well until everything is fully combined.
Take small portions and roll into balls. Flatten slightly to form a cookie shape.
Place the cookies on a tray lined with parchment paper.
Drizzle some melted chocolate on top for decoration (optional).
Refrigerate for 30 minutes or until set.
