Sweet potatoes add nutrients and flavor, while frozen hash browns save prep time.
Peel and chop 500 g of potatoes into bite-sized chunks.
Place potatoes in a pan of cold water, set over high heat, and bring to a boil.
Simmer potatoes for 5 minutes, then drain.
Heat half a tablespoon of olive oil in a large frying pan over medium-high heat.
Add 8 strips of bacon and fry for about 5 minutes, turning once until crisp.
Remove bacon from the pan and place on a chopping board.
Add 1 and a half tablespoons of olive oil to the frying pan and heat over medium heat.
Add the drained potatoes to the pan in a single layer and cook for about 4 to 5 minutes without moving them too much.
In another pan, add 2 cans of beans, 1 teaspoon of smoked paprika, and 1/8 teaspoon of white pepper, heating over medium heat until hot.
Reduce heat to low to keep beans warm.
Turn the golden potatoes over in the pan and add a finely diced onion, 1/4 teaspoon of salt, black pepper, and garlic powder.
Continue cooking for a further 5 minutes until the onion softens.
Chop the cooked bacon into small pieces and add it back into the pan with the potatoes, stirring together and cooking for an additional 1 to 2 minutes.
Turn off the heat and add 50 g of grated mixed cheese to the beans, stirring together.
Divide the potato mixture between plates and spoon the beans on the side.
Sprinkle another 50 g of mixed cheese on top of the beans and finish with a sprinkling of spring onions and black pepper.
