1 cup sugar
2 cups flour
coarse flaky salt

Measure all ingredients before starting.

Weigh 1 cup of flour (approximately 144 grams).

Measure 1/4 cup of sugar.

Cream together the cold salted butter and sugar until fluffy and light.

Add flour to the butter and sugar mixture and mix until the dough comes together, resembling play-doh.

Shape the dough into logs and wrap in plastic wrap.

Refrigerate the logs for at least 2 hours.

Prepare an egg wash and brush it onto the logs.

Roll the logs in sugar.

Slice the logs into 1/2 inch thick cookies.

Sprinkle coarse flaky salt on top of the cookies before baking.

Bake in the oven for 11-12 minutes until golden brown around the edges and pale in the center.
