Use a squeezing method to incorporate moisture into the dough without making it too sticky.

Once the dough comes together, knead it for a few seconds and then add oil to smooth it out.

Cover the dough and let it rest for about 20 minutes.

In a bowl, mix the sliced potatoes with chopped cilantro, cumin powder, turmeric, and salt to taste.

Add about 1/8 cup of flour to the potato mixture to help bind it together.

Mix the potato filling until well incorporated, avoiding large chunks of spices.

After resting, knead the dough briefly to soften it further.

Divide the dough into 8 equal portions, rolling them into balls.

Flatten each ball slightly and place about 1/4 cup of potato filling in the center.

Pinch the edges of the dough together to seal the filling inside.

Dust the stuffed dough ball with flour and set aside.

Roll out the stuffed ball gently into a flat disc, being careful not to let the filling spill out.
