Cook 1 cup of rice with 2 cups of water and a pinch of salt on medium heat.
Peel a thumb-sized piece of ginger and add it to the rice for flavor.
Prepare a paste in a food processor with ginger, lemongrass, garlic, green chilies, shallots, and coriander.
Heat 1 tablespoon of groundnut oil in a pan.
Add 750 grams of chicken thighs to the hot pan and fry for 8 minutes.
Add mixed mushrooms to the pan, pushing the chicken to the side.
Stir in the prepared paste and add light coconut milk.
Add a little water and mangetout, cooking for 2 minutes.
Finish with 2 teaspoons of fish sauce and juice from 1.5 limes.
Top with Thai basil and serve with the ginger-infused rice.
