Add 2 packets of instant yeast and 1 tablespoon of sugar to warm water and mix; let the yeast rise for 5 minutes.

After 5 minutes, add another glass of warm water, separate the yolks of 3 eggs (keeping 2 for topping), and add 1 glass of yogurt and 1 glass of oil; mix all ingredients homogeneously.

Add 1 tablespoon of salt and 5 cups of flour to the mixture, then add the boiled and mashed potatoes; knead with hands to eliminate lumps.

Add the remaining flour gradually while kneading; note that the dough will stick to hands and may require more flour, totaling 8 cups.

Let the dough rest for 5 minutes, then cut it into small pieces using a cup and roll each piece into orange-sized meringues, oiling hands to prevent sticking.

Place the meringues on a baking sheet lined with parchment paper, cover, and let them sit for 20 minutes to ferment.

Mix the reserved egg yolks with some milk and brush the mixture over the meringues.

Top each meringue with about 100 grams of grated cheddar cheese and sprinkle with pumpkin and sunflower seeds.

Bake in a preheated oven at 200°C until golden brown and the cheese is melted.
