Choose a whole chicken weighing 750-1000 gm.

Spatchcock the chicken by cutting it from the back and opening it like a butterfly.

Create gashes in the chicken for marination.

For the first marination, crush black pepper and add it to the chicken.

Add curd (yogurt), ginger-garlic paste, salt, and lemon juice to the chicken and marinate for at least half an hour.

For the second marination, grind cumin, cinnamon sticks, green cardamom, coriander seeds, fennel seeds, cloves, and dried red chillies into a fine paste after broiling them on low to medium flame.

Add coriander leaves, red onions, and red tomatoes to the ground spices to make the second marination paste.

Apply the second marination to the chicken after the first marination is done.

Transfer the marinated chicken to a baking tray and optionally add vegetables and whole or cut limes.

Bake the chicken until it is caramelized on the outside and juicy inside.

Garnish with roasted tomatoes, roasted green chillies, lime or lemon slices, and spring greens.
