Boil beetroot and carrot in water for 25 to 30 minutes.
Steam cauliflower and broccoli for about 10 minutes until tender.
Grate all the boiled vegetables using a grater.
Peel the skin off the beetroot before grating.
In a food processor, combine walnuts, parsley, dill, garlic, spices, and red hot chili pepper powder.
Add 50 milliliters of water and blend until smooth to make pesto.
Mix in 4 tablespoons of white wine vinegar into the pesto after blending.
Divide the pesto into four parts and mix each part with the grated vegetables separately.
Check the seasoning and add salt if needed.
Form the mixture into round balls.
Garnish with pomegranate seeds before serving.
