2 teaspoons black pepper
1 to 2 tablespoon canola or veg oil
1 sazon packet
1 tablespoon garlic powder
1 tablespoon sugar
crushed tomatoes
1 large sliced onion
1 large sliced bell pepper
4 stals chopped celery
1/4 cup MOJO liquid season or lime or apple cider vinegar
1/2 cup frozen peas optional
1 large or two small potatoes peeled optional
1 teaspoons red pepper flakes

Chicken thighs provide a leaner option while pork hocks are more affordable.

Clean pig feet with vinegar and lime/lemon.

Prepare sofrito or green seasoning, onion powder, paprika, chicken bouillon, dried oregano, black pepper, canola or vegetable oil, sazon packet, garlic powder, sugar, and crushed tomatoes.

Slice the onion and bell pepper, chop the celery, and peel the potatoes if using.

In a large pot, heat oil over medium heat.

Add the sliced onion and bell pepper; sauté until fragrant.

Stir in sofrito, onion powder, paprika, chicken bouillon, dried oregano, bay leaves, black pepper, garlic powder, sugar, and red pepper flakes; cook for a few minutes.

Add the pig feet to the pot and brown on all sides.

Pour in enough water to cover the pig feet and add the MOJO liquid or vinegar.

Bring to a boil, then reduce heat to medium and braise for about 3 hours, checking every 15 to 20 minutes to see if more water is needed.

If using, add chopped celery, frozen peas, and potatoes during the last 30 minutes of cooking.
