Start by placing 16 ounces of shredded coleslaw into a large bowl.
Add 1 cup of sunflower seeds to the bowl.
Slice 5 stalks of scallions and add them to the bowl as well.
Stir the mixture well to combine all the ingredients.
To make the dressing, combine 3/4 cup of vegetable oil, 1/3 cup of white sugar, and 1/3 cup of white vinegar in a separate bowl.
Whisk the dressing together until combined, noting that the sugar may not dissolve completely.
Pour the dressing over the salad mixture and stir well to coat everything evenly.
Refrigerate the salad for at least 2 hours to allow the flavors to meld.
Before serving, crush 2 bags of ramen noodles either by hand or using a rolling pin in a Ziploc bag.
Add the crushed ramen noodles to the salad just before serving and stir to combine.
