1/4 pound jalapeno peppers
3/4 cup regular water
1 1/2 cups white distilled vinegar
1 tablespoon kosher salt
1 tablespoon granulated white sugar

Combine and marinate chicken.

Third marinade (Mexican style): add 1/4 cup lime juice, 1 teaspoon minced garlic, 1 teaspoon kosher salt, 1 teaspoon ground black pepper, 1 teaspoon hot Mexican chili powder, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon cumin, 1/4 teaspoon cayenne pepper, 1/4 teaspoon red chili flakes, and fresh cilantro. Combine and marinate chicken.

Slice tops and ends off jalapenos, then cut into coins.

Prepare pickling brine with 3/4 cup water, 1 1/2 cups white distilled vinegar, 1 tablespoon kosher salt, and 1 tablespoon granulated white sugar. Dissolve and bring to a boil.

Once boiling, remove from heat and submerge jalapenos in the brine.
