Plant-Based Lasagna

9 lasagna noodles
2 cups marinara sauce
1 cup ricotta cheese (plant-based)
2 cups spinach, chopped
1 zucchini, sliced
1 bell pepper, diced
1 cup mushrooms, sliced
2 cups vegan mozzarella cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup fresh basil, chopped

Preheat the oven to 375°F (190°C).

Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

In a mixing bowl, combine the plant-based ricotta cheese, garlic powder, onion powder, salt, and black pepper. Mix well.

In a baking dish, spread a thin layer of marinara sauce on the bottom.

Layer 3 lasagna noodles over the sauce, then spread half of the ricotta mixture over the noodles.

Add half of the chopped spinach, zucchini, bell pepper, and mushrooms on top of the ricotta layer.

Sprinkle 1/3 of the vegan mozzarella cheese over the vegetables.

Repeat the layering process: add another layer of marinara sauce, 3 lasagna noodles, the remaining ricotta mixture, the remaining vegetables, and another 1/3 of the vegan mozzarella cheese.

Top with the final 3 lasagna noodles, the remaining marinara sauce, and the rest of the vegan mozzarella cheese.

Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is melted and bubbly.

Let the lasagna cool for 10 minutes before slicing. Garnish with fresh basil before serving.
