150g (about 1 cup) Semi-Sweet or Milk Chocolate, chopped
240g (1 cup) Heavy Cream
About 15-18 Round Plain Cookies
80g (1/3 cup) Heavy Cream (to dip the cookies)
Chocolate shavings and whipped heavy cream for decoration (optional)

In a medium bowl, place the chocolate and 1 cup of heavy cream.

Melt using a double boiler or microwave in 30-second intervals, stirring after each until smooth.

Quickly dip the cookies in heavy cream (one at a time, so they don’t become soggy) and place them onto the bottom of each ramekin.

Spread about 1 tablespoon of ganache on top of the cookies.

Repeat this process until they reach 6 layers (finishing with ganache).

Sprinkle chocolate shavings on top and decorate with whipped heavy cream (optional).

Refrigerate for at least 2 hours.
