Wash all greens and set them out to dry.

In a bowl, combine 4 cups of flour, 1 teaspoon of salt, 1 teaspoon of apple cider vinegar, and 2 tablespoons of olive oil.

Gradually add water and mix with hands until a very soft dough forms.

Knead the dough for about 5 minutes until it springs back and doesn't stick.

Cover the dough with cling wrap and let it rest for 30 minutes.
