Start by making the cinnamon sugar coating: In a bowl, combine 1/2 cup of sugar and 2 tsp of ground cinnamon, and mix until well combined.

In a saucepan over medium heat, add 1/2 cup of water, 1/2 cup of milk, 3 tbsp of butter, 2 tsp of sugar, and a pinch of salt.

Stir the mixture over medium heat until the butter and sugar are dissolved.

Once the mixture comes to a boil, take it off the heat.

Add 1/2 tsp of vanilla extract and 1 cup of plain flour to the saucepan.

Using a spatula, stir and squeeze the mixture until all lumps are gone and it is smooth.

Transfer the mixture into an icing bag, using either a round tip or a star tip for shaping.

Set a deep fryer to 180° C (350° F).

Pipe bite-sized pieces of the dough into the hot oil, cutting them off as you go, and fry about 10 at a time.

Fry for about 1 to 2 minutes until they are golden brown and floating on top.

Remove the churro bites from the oil and coat them in the cinnamon sugar mixture made earlier.

Drizzle melted chocolate on top of the coated churro bites.
