Preheat the oven to 380°F.
Season 2 lbs of chicken wings with rum, salt, lime juice, and fresh cracked black pepper.
Add olive oil to the wings and mix to coat them evenly.
In a separate bowl, combine orange juice, soy sauce, brown sugar, ginger, garlic, and mild jerk seasoning to create the marinade.
Pour the marinade over the wings and mix well to coat.
Wrap the wings tightly and refrigerate for about 3 hours.
After marinating, spread the wings evenly on a foil-lined sheet pan, leaving space between them for even cooking.
Place the wings in the preheated oven at 380°F and let them cook.
While the wings are cooking, prepare the glaze by combining orange juice, dark rum, butter, cracked allspice berries, paprika, and honey in a saucepan.
Bring the glaze to a boil and then add the reserved marinade liquid from the wings.
Let the glaze simmer for about 5 minutes until it thickens slightly.
Check the wings in the oven; they should be releasing juices.
Add the juices from the wings to the glaze for extra flavor.
Return the wings to the oven to continue cooking and coloring.
After cooking, remove the wings from the oven and toss them in the prepared glaze.
Set the oven to broil and place the glazed wings back on the sheet pan.
Broil the wings to caramelize the sugars in the glaze, watching closely to prevent burning.
Once caramelized, remove the wings from the oven and toss them in the glaze again.
Let the wings cool slightly, then sprinkle fresh lime zest on top for added flavor.
Serve and enjoy the wings.
