Preheat the RT 680 grill to 400 degrees.

Heat a cast iron pan until it's screaming hot.

Remove chorizo from its casing and add it to the hot cast iron pan to render it out.

Dice the onion and add it to the pan while cooking the chorizo to sweat it down.

Dice the poblano pepper and add it to the pan for flavor.

Cook the chorizo for about 8 minutes until almost fully cooked.

Add the diced onion and poblano to the chorizo and cook for another 5 to 8 minutes until the vegetables are soft.

Remove about half of the chorizo mixture from the pan.

Add 2 pounds of Oaxacan cheese on top of the remaining chorizo mixture.

Cook until everything is bubbly and golden brown, about 20 minutes.
