5 ounces of Mexican chorizo, casing removed and broken into small bits
2 ½ cups Monterrey cheese, shredded
4 homemade flour tortillas
1 cup homemade roasted salsa
2 green chilis (optional)
1 avocado, sliced

Preheat oven to 350°F.

Break chorizo into bite-sized pieces. Heat a skillet on medium heat and add the chorizo. Cook it for 6 to 7 minutes, while stirring continuously to avoid them from sticking on the pan. Cook till chorizo is brown and nicely rendered.

Take 1 tbsp of chorizo and layer it evenly in a cast iron pan. Add a layer of shredded cheese, followed by chorizo. Keep 2 to 3 tsp of chorizo aside for topping. Add a final layer of cheese and bake at 350°F for 12 to 15 minutes till the cheese starts bubbling. Remove from the oven and top off with chorizo.

To serve, add 3 to 4 tbsp of queso fundido in a tortilla, top off with salsa, avocado and chopped chilis and serve hot.
