Queso Fundido is a popular Mexican dish often served as an appetizer in restaurants and at gatherings, showcasing the rich flavors of melted cheese and spicy chorizo.

Ingredients

  • 1 lb chorizo sausage
  • 2 cups shredded cheese (such as Oaxaca or Chihuahua)
  • 1/2 cup diced onion
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 jalapeño, diced (optional)
  • 1 tbsp olive oil
  • Tortilla chips for serving

Instructions

  1. 1In a skillet, heat the olive oil over medium heat.
  2. 2Add the chorizo sausage and cook until browned, breaking it up with a spoon, about 5-7 minutes.
  3. 3Stir in the diced onion and cook until softened, about 3-4 minutes.
  4. 4Add the diced tomatoes and jalapeño (if using) and cook for another 2 minutes.
  5. 5Reduce the heat to low and sprinkle the shredded cheese over the chorizo mixture.
  6. 6Cover the skillet and let the cheese melt, about 5 minutes.

Instructions

  2. 2In a cocktail shaker, combine the tequila, Grand Marnier, fresh lime juice, and simple syrup.
  3. 3Fill the shaker with ice cubes and shake vigorously for about 15 seconds.
  4. 4Strain the mixture into the prepared margarita glass filled with ice or serve straight up without ice.
  5. 5Garnish with a lime wedge on the rim of the glass.
  6. 6Serve immediately and enjoy your Cadillac Margarita.
