Wrap the blistered peppers to seal in heat for a few minutes.

Remove the casing from 4 chorizo sausages and crumble the sausage into pieces.

Brown half of the crumbled chorizo in a cast iron skillet on the stove.

Chop the blistered poblano peppers, removing the seeds, and slice them.

Add the chopped poblano peppers to the skillet with the browned chorizo.

Sprinkle mozzarella cheese over the mixture and mix well.

Top with the remaining half of the crumbled chorizo.
